Kerstin's Vitamix Tzatziki Recipe

Kerstin's husband Dan is the chef in the family.  But Kerstin has started “cooking” a little too, because of her Vitamix.  She's earned permission to at least work with that one kitchen appliance. Smiley Tongue

 

Here is one Dip that Kerstin frequently whips up and enjoy in the Summer; Tzatziki, a cool Greek Dip.   In the summer, Kerstin grows her own dill, cucumbers and mint and uses that in place of the store bought.

Tzatziki Recipe

 

Ingredients:

4 cucumbers (more if you prefer), sliced into rounds

½ cup fresh dill (more if you prefer)

¼ cup mint

1 Tbsp champagne vinegar

3 Tbsp lemon juice

1 Tbsp garlic, minced

1 pint plain Greek yogurt

½ cup sour cream

Salt and Pepper, to taste

 

 

Directions:

Place the cucumbers on a paper towel, draped over a colander and sprinkle with salt.

Let the salt leach the water from the cucumbers for a few hours, or overnight.

 

Add the cucumbers, dill, mint, vinegar, lemon and garlic to the Vitamix and blend

on variable 4 or 5 until the ingredients are mixed and the cucumbers chopped but not pureed.

Fold the mixture into the yogurt and sour cream.

Add a dash of salt and place in the fridge for at least an hour.

 

 

Serve with any chip, pita or veggie, Yum!
