Gluten Free Chocolate Chip Cookies

 

Ingredients

* 1½ cup gluten-free all-purpose flour (Pillsbury GF flour mix)

* ½ teaspoon salt

* ½ teaspoon baking soda

* ½ teaspoon baking powder, gluten free

* 1/2 teaspoon xanthan gum

* 1/2 cup real butter, softened at room temperature

* 1/3 cup white sugar

* ¾ cup brown sugar packed

* 1 egg

* 1 egg yolk

* 2 teaspoons real vanilla extract, gluten free

* 1 bag semi-sweet chips

 

Instructions

  1. Mix together flour, baking soda, baking powder, xanthan gum, and salt in a bowl and set aside. 
  2. In a large bowl cream together room temperature butter, sugars, eggs, and vanilla extract. 
  3. Spoon your dry mixture into your wet mixture until fully incorporated.
  4. Drop in the chips and mix thoroughly. 
  5. Take the dough, cover it, and chill it in the refrigerator for 30 minutes. 
  6. Line cookie sheet with parchment paper. Use a spoon and form each cookie into a ball.
  7. Bake at 375 degrees for 7-11 minutes depending on your oven type and altitude.   When they brown, they’re done - you know your oven best.
  8. They’ll firm-up around the edges when they cool. This recipe yields about 30 cookies.
