Dad-Approved Recipes...Loaded Roast Beef Sandwich and Grilled Pizza

Hello, foodies…

 

Happy Father’s Day to all the dads, stepdads, grandpas, and father-figures. I hope your celebrations (and special treatment!) last all weekend. Also, happy SUMMER to everyone! Sunday marks the first “official” day of the summer solstice and that calls for some outdoor time and at least one barbecue this weekend, don’t you think?

 

I’ve got two dad-approved, summertime-perfect recipes to share with you in honor of our big weekend. First up is Sunday’s ITKWD road trip recipe inspired by a Pittsburgh famous restaurant. Here’s our Loaded Roast Beef Sandwich.

Loaded Roast Beef Sandwich

Serves 4–8

 

This recipe is prepared with the Mad Hungry 4-Piece Air Blade Knife Set with Sheaths (K41889).

Ingredients:

  • 1/4 cup ketchup
  • 1-1/2 tsp light brown sugar
  • 1-1/2 tsp whole grain mustard
  • 1-1/2 tsp balsamic vinegar
  • 1-1/2 tsp prepared horseradish
  • 1-1/2 Tbsp Worcestershire sauce
  • 4 Vienna rolls, halved widthwise
  • 1 lb deli-sliced roast beef
  • 1 cup prepared creamy coleslaw
  • 10 oz thin-cut French fries, cooked

 

Preparation:

  1. Combine the ketchup, brown sugar, mustard, vinegar, horseradish, and Worcestershire sauce in a small bowl.
  2. Lay the bottom halves of the split Vienna rolls on a cutting board. Spread 2 Tbsp of the sauce on the roll bottoms and then equally divide the roast beef, coleslaw, and fries among each roll, in that order. Close the sandwich with the roll-tops.
  3. Pierce each sandwich with 2 toothpicks (or sandwich picks). Cut each sandwich between the picks and serve.

It doesn’t matter if you go to Carnegie Mellon, Carlow, Duquesne, Robert Morris, or the University of Pittsburgh. Apparently everyone knows about and goes to Primanti Brothers and orders an “Almost Famous Sammich” which could be made with almost any kind of meat, but is topped with coleslaw and French fries. Clearly, that was a recipe we HAD to make.
