Crunchy Cranberry Granola

After you’ve had your fill of turkey and stuffing, you might be ready to lighten up.


Granola is great as cereal but it’s also delicious as a crunchy snack. I think homemade granola is the best. This recipe is yummy, and really easy to make. It also makes great gifts when packed into cello bags and tied with ribbon. If you have any left over, just store it in an airtight container like lock & lock (K39435). Enjoy!


 


Crunchy Cranberry Granola



1 1/2 cup light brown sugar


1/2 cup water


4 teaspoons vanilla extract


1 teaspoon salt


8 cups rolled oats


2 cups chopped walnuts (can substitute or combine pecans and almonds)


2 cups sweetened dried cranberries


 


Preheat oven to 275 degrees


 


Line 2 cookie sheets with parchment paper


 


Combine brown sugar and water in a sauce pan and cook on low heat, stirring until sugar is completely dissolved. Remove from heat and add vanilla extract and salt.


 


In a large mixing bowl, combine oats and nuts. Stir in brown sugar mixture until everything is thoroughly mixed. Spread the granola onto the cookie sheets and bake 45-60 minutes until golden brown and crunchy.



Remove from oven to cool. Once cooled, stir in cranberries and store in an airtight container.
