Clean Snack Attack!

It's #SnackAttack time and I'm sharing my favorite clean eating snacks with you! See below for my first round of recipes Smiley Happy 




Spiced Toasted Edamame

1 lb frozen edamame, thawed

1 tbsp. sesame oil

1/2 tsp each ground ginger and sea salt

pinch of ground cayenne


Preheat oven to 375. Toss all ingredients together and spread on parchment-lined baking sheet. Bake for 35 minutes. Let cool and store in airtight container.





1 tbsp. coconut oil

1/2 cup unpopped popcorn

1 tbsp. garlic powder

1/2 cup grated parmesan

salt and pepper to taste


Combine oil and popcorn in large pot with lid and heat on med/high. Remove from heat when popping slows and let finish. Toss with remaining ingredients and enjoy!




PBB Cups

3/4 dark chocolate chips

1 banana sliced

1/4 peanut butter, homemade or all-natural

tbsp. melted coconut oil

silicon baking cups


Melt chocolate in double boiler or in microwave (stir often to prevent seizing). Combine pb and coconut oil in separate bowl. Layer in the baking cups:

-1/2 tbsp. chocolate

-banana slice

-teaspoon pb mixture

-teaspoon chocolate

Then let sit in refrigerator until set.
