Cherries in the Snow Recipe

Each year at the first snowfall, I like to make Cherries in the Snow. It's a sweet treat and the red and white ingredients make me think of Christmas. I missed our first snowfall but we had a dusting last night and it reminded me of this!  I hope you will forgive me for being a little late!  :-) 

 

P.S. In my first cookbook, 'My Family's Favorites', this recipe is on page 140 and is called, "Cherry-Berries Dessert", but I like to call it "Cherries in the Snow".

 

Cherries in the Snow

  • 6 Egg whites
  • 1/2 Teaspoon cream of tartar
  • 1/4 Teaspoon salt
  • 2 3/4 Cup sugar
  • 6 Ounces softened cream cheese
  • 1 Teaspoon vanilla
  • 2 Cups whipping cream
  • 2 Cups miniature marshmallows
  • 1 Can (21 oz.) cherry pie filling
  • 1 Teaspoon lemon juice
  • 2 Cups frozen strawberries (or sliced fresh fruit of your choice)

 

Heat oven to 275 degrees. Grease a 9" x 13" pan.

 

Beat egg whites, cream of tartar and salt until frothy.

 

Gradually beat in 1-3/4 cup sugar. Beat until stiff and glassy, about 15 minutes. I love my KitchenAid!

 

Spread mixture in greased pan.

 

Bake for 60 minutes. Turn off oven leaving meringue inside to cool overnight, about 12 hours.

 

Remove pan from oven after about 12 hours.

 

Mix together cream cheese, 1 cup of sugar and vanilla.

 

Gently fold in whipped cream and marshmallows. Spread over meringue and refrigerate overnight for about 12 hours.

 

Top with a mixture of the cherry pie filling, strawberries and lemon juice.
