Celebrating National Oyster Day with Mom's Soup Recipe

It's National Oyster Day! Being born and raised in New Orleans, this is practically an official national holiday for me! So in honor of, I'm cooking up my mom's quick and easy Oyster and Artichoke Soup! It was the best feeling in the world coming home from school and smelling this brewing in the kitchen. Give it a go!

You will need:

 

1 stick butter

1 small onion chopped very fine

3 stalks celery chopped very fine

1 can chicken broth

1 can artichoke hearts, drained and chopped

1 qt oysters, drained and chopped

4 cups milk

 

Melt the butter in a stockpot over medium heat. Add the vegetables and sauté until tender, about 10 minutes. Pour in the stock and reduce heat to low. Simmer for about 15 min, stirring occasionally. Add artichokes, oysters, and salt/pepper and simmer 10 minutes more. Stir in the milk and cook on low about 15 minutes, careful not to let it boil. Then serve! Mom's tip: it's even better the second day after all the flavors mingle!
