Blueberry Kiwi Mojito

My good friend Pat and her family went blueberry picking and she shared the fruits of labor with me with this big container of fresh blueberries. So I was thinking what I am going to make with this big thing of blueberries….?

 

A Blueberry Kiwi Mojito!  Refreshing and delicious and made with Pat’s blueberries!  Enjoy!

Blueberry Kiwi Mojito

 

6 Kiwi peeled

4 Kiwi peeled and sliced for garnish

2 cups fresh blueberries

1 1/2 cup white rum

¼ cup lime juice

1 lime

1 cup sparkling water

½ cup sugar

fresh mint leaves

blue sugar to rim the glasses

ice

 

Instructions:

  • Puree 6-peeled kiwi.  Add sugar & lime juice, pulse until blended, pour into a pitcher.  Add the rum.
  • Crush half of the blueberries, add to pitcher
  • Add fresh mint leaves, ice & sparkling water.  Add sliced kiwi and whole blueberries to the pitcher.  Stir.
  • Rim the glasses with lime juice and dip into the blue sugar. 
  • Scoop a little of the kiwi and blueberries into each rimmed glass.  Pour your mojito and enjoy responsibly Smiley Happy
