Basso Family Christmas Eve Shrimp Scampi

Recipe

 

Ingredients

 

16 jumbo shrimp cleaned, deveined, tail-on

1/2 cup extra-virgin olive oil

1/4 cup dry white wine

Juice of 2 lemons

1/4 cup of finely chopped flat parsley

6 cloves of garlic, minced

3 tablespoons of paprika

salt and pepper to taste

1 stick of sweet butter melted

1/2 cup of Italian seasoned bread crumbs

1 cup of rice cooked

lemon wedges, for serving

 

 

Directions

In a nonreactive mixing bowl add ingredients except for the shrimp, bread crumbs and butter. 

 

Whisk until completely mixed. 

 

Add shrimp and marinade for 30 minutes to 2 hours in the refrigerator covered. 

 

Remove shrimp and arrange in a broiler safe baking dish.

 

Boil marinade in small saucepan, reduce and pour approximately 1 cup of marinade over shrimp. 

 

Sprinkle the bread crumbs on top of the shrimp and drizzle the butter on top.  

 

Broil for 8 to 12 minutes at 500 degrees, checking to see if the shrimp are cooked through, shrimp should be opaque. 

 

If the mixture appears dry add more olive oil and a little more lemon.  

 

Serve with rice and lemon wedges.
