Bacon Sausage Potato Soup

Comfort food!  When it's cold outside I love comfort food.  Here is one more stick to your ribs soup recipe.  And although it has potatoes, cheese etc. it is not too heavy.  I hope you like it.  Share with me your comfort foods!

Pressure Cooker Bacon Sausage Potato Soup

4 strips bacon

4 cups chicken stock

1 pound sausage (I used a chicken sausage this time)

1 onion, chopped

3 cloves garlic, minced

4 cups kale, chopped

1/2 cup carrots, chopped

1/2 cup celery, chopped

4 cups peeled & cubed potatoes

1 cup heavy cream ( i didn’t have cream so I used half & half)

1 cup cheddar cheese, shredded

Salt & pepper to taste

 

Use the sauté feature on your pressure cooker, cook the bacon until crisp.  Remove from the pan, leave the bacon drippings and save the cooked bacon for garnish Sauté onions, garlic, celery & carrots in the reserved bacon drippings until soft.  Add sausage and continue cooking until cook through.

 

Add potatoes and broth.  Cook under pressure for 10 minutes, then carefully, quick release the pressure For a thicker soup puree some of the soup and add back into the pot. Add the cream, cheese and kale.  Stir and let sit for 5 - 10 minutes until kale wilts.

 

Top each serving with a little shredded cheese and bacon crumbles.
