Nick Chavez Soft Flocker?

I've been using this product for a while and really like it and I'm thinking of ordering the 3 2oz jars; however, I'm not sure how to store it so it doesn't change its consistency.  The jar I'm using up right now I've had for a while and I notice when I get to the end of it, it gets quite thick and sticky.  I'm wondering if storing in the frig would help.  Has anyone done this?

i think the fact that it's open, is the posibble cause. how long does it take you to use up a container?
