You could wear taupe or a medium gray with a little shimmer.  Check out Bobbi Brown or Laura Mercier as both have excellent shadows.  You can also go for a vanilla color which opens up the eye and brightens.  Cat Very Happy

A couple of years ago, took all my eye shadows and crushed them to a powder and mixed them together.  There were blues, greens, grays, browns, purples ... lots of singles and a couple of compacts/trays with a variety of colors.

 

When all mixed, it turns out to be a dusty brown shade ... absolutely perfect for every day.   I have enough to last me the rest of my life.  The only other one I use is a "white" for highlighting.

 

So - my answer for me - green eyes - is a dusty brown.
