Hope it's OK to jump in here! I hold a strainer (with spinach in it) over the sink (not a collander -- holes too large), and I push down with the other hand and turn and gently knead the spinach so the liquid is squeezed out.

Now that we live in a rural area this was the first Thanksgiving I decided to take advantage of all the live farms in my area. I bought a fresh turkey. It was "processed" on a Tuesday, we picked it up on Thursday and our Thanksgiving was last Saturday. Can't get any fresher than that! Everyone just raved how much better my turkey was this year!
