Our newly turned five year old grandson said of my crustless spinach quiche, "Gram, this is really, really good!!!".

Most surprising thing? Some guy I didn't know bought me dinner tonight.
I was alone, making my list & checking it twice while waiting for my entree........
Guy at the next table started a conversation with me. Wasn't interested but he kept chatting. He offered to buy me dinner which I declined. I asked the waiter for the check, he said the guy next to you paid for your dinner.

Wow! That quiche must have been really good to get a five year old to eat spinach! You need to share that magical recipe with the rest of us please. :-)

Here ya go! Makes a great din with a salad too!!! Left over microwaves great!
Crustless Spinach Quiche
Preheat oven to 350 degrees
1 Tbls. Oil
1 lg. onion, chopped
1 pkg chopped, frozen spinach, all water squeezed out
5 eggs
¾ lbs Muenster cheese, grated
Salt, pepper
Preheat oven to 350 degrees
Spray pie plate
Heat oil in skillet over med heat
Add onion cook only until clear
Add spinach, cook only until excess moisture is out
Let cool.
Beat eggs in bowl with fork or whisk.
Add cheese, salt, pepper to taste
Stir onion, spinach mixture in.
Pour into pie plate
Bake 40-45 minutes until lightly brown.

We would have been alone but for a new friend who invited us to be part of her family. Surprising, no cell phones, just paying attention to us as the guests and making us feel like part of the family. I am still feeling the love and belonging.

My almost 6 year old great nephew told me I had soft skin when he touched my arm. And my 3-1/2 great nephew came running out of their front door to give me a hug when I got out of my car. Those two little guys have my heart.

My son brought his girlfriend and she loved my stuffing and asked for the recipe. I gladly gave it to her as it's my moms recipe and make it every year since mom passed to have her close in some way.

Hi @ECBG...was just signing off when I saw this...silly question: How do you squeeze excess liquid out of spinach!? All I can think is to roll it in paper towels??
