@Justice4all  Apologies. The top oven of my double ovens is convection. It cooks faster.

@Justice4all  My granddaughters love the fried pancakes I make w/ leftover or “new” mashed potatoes. We eat more vegetarian during Passover...seems easier. 

 

 

 

Passover Potato Pancakes

 

 

 

Mashed Potatoes...already seasoned (note: if used milk, no            longer Kosher. Can 

              find non-dairy substitutes in frig. sections)

Sauteed onions

Eggs to bind

Matzo meal (like bread crumbs)

 

Mix everything (except matzo meal) together in lg. bowl

Form small patties, dip both sides in matzo meal to coat 

 

Fry in small amount of veg. or olive oil. They come out like hash brown patties.

 

NOTE: my family likes when I vary the recipe by adding sautéed shredded zucchini, shredded carrots, parsley (always lots left from Seder), minced garlic, combination of mashed sweet potato w/ mashed white potatoes. You can select any or all from above list.

Meatball Lollipops

 

 

I make my usual meatballs only smaller using matzo meal instead of bread crumbs. I bake them on a sheet pan in the oven. When finished, I put 1/2 a short wooden skewer in each one...Lollipops!

 

The kids love to help make these...can roll the meatballs and insert sticks. They dip them in ketchup or BBQ sauce.

I made tiny beef/chicken meatballs, and my grand kid skewed them with a toothpick and dipped them in ketchup with glee!!  

I added nothing to the already salted meat...what exactly do you add?  I invite you, (and anyone else here) to share more kid-friendly recipes!
