Rainbow cake is my favorite.  When I was a little girl  my aunt bought me a rainbow cake for my birthday from Marhshall Fields every year.

Here I am, 60 years later, and still celebrating my birthday with rainbow cake.  This year it was a Hawaiian version with fruit flavored layers.

There were always 2 variants, one filled with jelly, one with chocolate. My kids loved the chocolate, I am happy with either.

@kittyloo   I have made this for the kids' birthdays...goes back to my almost 50 yr. year old "kids", too.

I always try to use as many yellow/white layers now with jams, vanilla icing mixes w/ coconut or whipped cream mixed w/ fresh blueberries, strawberries.... It all works, but the less food coloring, the better. I agree.
