Leeny,   Your roast beef sounds so good.  It's one of my favorite Autumn meals.  Since I live alone now,  I don't fix roasts very often so I miss the wonderful aromas filling the house and the great taste of beef or pork roasts with gravy and carrots, potatoes and onions.  Some times I'd add a sweet potato to the roast as I love them in any form, especially with a rich brown gravy over them.   Now I am making myself quite hungry and I don't have anything fixed yet, or even started.   I do have quite a bit of the huge pot of beef barley and veggie soup I made Friday.   Gave over half of it to my daughter so she'll have it for lunch and maybe a couple of suppers if my granddaughters don't eat it all first.   🥣🍅🥕🥬🧅🧄🥔🥩😍

This pic looks just like what we had for dinner. We don't have too much left overs either. In the "old" days I use to have a lot more left over to make beef stew, but with the prices of meat I don't have much left. It tasted so good. My favorite meal. We use to have this almost every Sunday when I was growing up, but not today. My father would roll over if he could see the prices of a roast.or any meat for  that matter.
