Build a cold frame up against a small window in your house at ground level, if possible. Open the window up in the winter and heat from your house should produce enough heat for the cold frame. There are seeds that are specifically used for growing in winter. Until my husband constructs one for me, I'm lucky to have friends who have a huge farm and grocery store where they sell their produce. I just bought spinach there yesterday, it wasn't cheap at $1.95 a half pound and it wasn't organic. I do grow organic greens in the spring. I can tell you the farmers I know turn their soil  over in the fall when they plant ground cover and again in the spring. I plant my greens in raised beds and do the same.Right now, I will not buy greens from someone I don't know.
