Someone recently posted a gingerbread recipe in Recipes or Kitchen forums.  I meant to copy it and now I can't find it.  I would appreciate any assistance in locating this recipe.  It looked like a simple, easy recipe to follow.

Thank you in advance.

@qbetzforreal

These are from long ago on this board:

Elsie's Gingerbread

1 -1/2 c. unbleached white flour
1 c. sugar
2 tsp. ginger
1 tsp. cinnamon
1/2 c. butter or shortening
1 egg, well beaten
3 tbsp. molasses
1 tsp. baking soda
1 scant tsp. salt
1 c. buttermilk

Preheat oven to 350 degrees. Combine flour, sugar, ginger and cinnamon. Cut in butter or shortening. Reserve 1/4 cup of this crumbled mixture for topping. Add egg to the flour mixture. Stir in molasses. Dissolve soda and salt in buttermilk. Add to the other mixture. Pour into a greased 9-inch square pan, sprinkle with the reserved topping, and bake for 30 minutes.

This is my grandmother's recipe.

1 1/2 c sifted flour
3/4 t salt
3/4 t baking soda
1/2 t ground ginger
1/2 t ground cinnamon
1/2 c boiling water

Preheat oven to 350* Cream sugar and shortening. Add egg and molasses: beat. Sift together dry ingredients. Add dry ingredients alternately with water, beat after each addition. Bake in a greased 8 inch pan. Bake for 35-40 minutes.

Gingerbread mix is almost impossible to find in stores now so I really appreciate the recipe.  I've never made my own but I think I'll try it now.

I don't care for for pumpkin pie but I do love a slice of gingerbread with a little Cool Whip on it.

I told my husband he can have the pumpkin pie and I'll have the gingerbread for dessert on Thanksgiving day.
