What is Caldo de Res?

@Andreatoo It's a beef and vegetable soup. A rich broth is made from beef shank and beef bones, then corn (usually still on the cob, broken in half), potatoes, cabbage and any other veggie of preference is added, along with lots of cilantro and traditional Mexican seasonings such as, chili powder, comino and of course, lots  of garlic/onions and jalapeno's if you like it hot. Good stuff.

 

It's kind of like 'cocido' which I love, I don't make it, order it from a little neighborhood mexican restaurant with cilantro, chopped onions, lemon and warm corn tortillas, yum!

Also Campbell Tomato Soup made with milk alongside a grilled cheese sandwich!

I do not do dairy so I found myself avoiding several good soups.

 

I discovered Imagine boxed potato and leek soup and used it as a base for cheese, broccoli; potato corn chowder and cream of asparagus.  Cream of any veggie or just a base for roasted veggies, Yum! 

 

Great discovery!  Great tasting soups!

@ECBG We make a leaner roast with tomatoes, carrots, onions, and celery, bell pepper around it--slow roasted in the oven.  

 

After we have a roast meal, we use the leftovers in a soup and wow is it good!  We sometimes add a little of the defatted juices.

@Goldengate8361 How about the old Weight Watchers Zero Point Soup?  Lots of recipes for that around.

I make soup a lot.  I don't usually order it when I go out, unless it's gluten free which is usually a tomato or a black bean soup.  Most of the commercial soups use a roux, so they're out for me.  Any time I need to use up anything, enter the soup. Most are not "recipes" that I follow, but with similar bases.  Since the pandemic, I have also been making my own broth which saves time and $$$.  I prefer to have vegetarian soups more often but I am also cooking for a carnivore.  Usually if I make a pot of soup for him it will have 1/2 of a pound of ground turkey or chicken.  I either use my Le Creuset or Vitamix depending on what I'm making.  

 

In the rotation:

lentil

white bean with bacon

Italian wedding

minestrone

tortilla

broccoli/potato or cauliflower/potato

veggie

Iraqi chicken soup (a favorite!)

potato and corn chowder (sometimes with crab or with bacon)

black bean

wild rice

Reading all of these posts of delicious soup options brought to mind that I do love many more soups than I mentioned earlier. YES to Broccoli cheddar, potato, cold beet borscht blended with sour cream (or thick plain Greek yogurt). My dad loved it & we had it often during the hot summer. French onion soup is one I order frequently when out for dinner.

I make veggie beef soup & chili often during the cold winter months along with homemade chicken soup with rice, noodles & favorite matzo balls.  After Thanksgiving I've made delicious turkey broth using the leftover turkey, adding carrots, onions, celery & sweet potato.

my favorite soup is actually chili!!! I could eat it 2-3 times a week!!! I love it with crackers and shredded cheddar cheese!!  I could go for a big ol bowl right now. But my family doesn't like it in the summer but I could eat it year round

I have never eaten or ordered soup from any place. The only types of soups I eat have only veggies in it. Gonna make me a multi bean salad yet today. Yum!!!  🍜
