FINALLY LATKE DAY!!! ๐Ÿ•Ž

I don't know why I only make these for Hanukkah, but maybe so they'll be special. I try to cut out some of the carbs (& add nice color) by substituting some shredded zucchini. 

Wishing all Happy Hanukkah, first night of candle lighting and also Merry Christmas coming up in a few days.

My mother was an orphan who was raised by a Jewish family.  One of the results of all the cooking skills she learned was that we had latke's several times a year.  Love them!!!!!  Happy Hanukkah!

Pardon my ignorance/insensitivity, when my kids were in school, there were songs, plays, celebrations for Kwanza (sp ?), too. I'm not hearing about that holiday. Is it still celebrated?

My grandmother made the best latkes, in a cast iron skillet. I wish I had paid more attention to the recipe. Years ago, my grandson volunteered to bring potato pancakes to school, in celebration of holiday traditions. He had no idea how latkes were made. My mother and I, visiting at that time, worked like crazy to make the latkes for school. We succeeded, and my grandson learned how difficult it was to create these wonderful foods.

@Vivian   Cast iron skillet a must and I learned at my Nana's knee to get crispy latkes, squeeze all liquid from shredded potatoes & onion through cheesecloth. Yum. Mouth watering thinking about it.

The Latke prize goes to my Sister-in-Law in our family.

She uses a cast iron skillet.....one word describes them..YUM!

They sound delicious and totally worth the effort! A cast-iron skillet and dutch oven are IMHO necessities in every kitchen.  I am using mine today for marinara sauce.  Getting my Christmas Eve lasagna assembled and frozen ahead of time.

I made them once,  house smelled of onions for days, but they were good

 

so Team Apple Sauce or Team Sour Cream
