I love a pot roast and vegetables cooked with tomato soup, garlic, and Worcestershire sauce, chili, homemade (only) spagetti with angel hair noodles, and meatloaf with muchroom gravy.

 

I also am crazy over this dish which can be made A DAY AHEAD and reheats in servings perfectly as if just made!  My Foods students swooned over this one, salads and garlic bread.

 

Noodle Bake

Preheat to 350 degrees

 

Butter a large, deep casserole

 

Oil

2lbs.ground round

2 tsp. granulated garlic

2 cans tomato sauce

1 pkg small egg noodles

2 tbs. chives

1 lg. cream cheese, softened

1 lg sour cream

½ cup grated cheddar cheese

 

Brown ground round in small amt of oil.

Pour off all fat.  (I put mine in a colander and run hot water over it to

 Get all the fat off)

Add garlic and tomato sauce, simmer 15 minutes.

 

In bowl mix cream cheese and sour cream (I use a hand mixer)

Stir in chives.

 

Cook egg noodles in water with a small amt of oil for time to be used in other recipes.

 

In sprayed casserole layer:

½ noodles

½ cheese mixture ( dot it around and connect the dots)

½ meat mixture

REPEAT.

 

Sprinkle with cheddar.  Heat about 30 minutes.  Cheddar shouldn’t brown.

 

Can be made and refrigerated overnight.  Bake ONE HOUR.

Aww, chilli, stews and soups and cornbread. And fresh apple cake, for starters, moose munch, and other candy as Christmas comes on the horizon.

I can eat soups year round but I especially crave them through the fall and winter months.  We had cooler weather for about three weeks but this week the heat and humidity are back.  When the heat breaks, I'll be making chili and my SW Chicken Tortilla Soup.

Knowledge is knowing that a tomato is a fruit, but Wisdom is knowing not to put it in a fruit salad.

I'll be making more soups like loaded potato, chicken tortilla and chili. Crock pot meals and meatloaf will become more common by October 1.

It’s still hot and humid in Iowa, but I am already thinking about apple yeast bread, French apple cake, and apple crisp. I haven’t fixated on the entrees yet.... Hmmm.... what’s the old adage! “Life’s short. Eat dessert first!”

It's still in the high 90s here, so no cravings for soups, chilis, or anything that involves turning on an oven.

 

I'm looking forward to more orange squashes (acorn, butternut, spaghetti) in more stores and on more menus and more roasted vegetables. I look forward to making more chili and chicken soup, but that probably won't happen until at least November.

Due to food allergies I am restricted to eat within the same food selections all the time.   So for me, seasonal doesn’t mean much.
