5 or so large roasted broccoli florets. coarsely chopped

cooked white rice (about a handful)

cooked yellow split peas (about a handful)

 

 I made a sauce before I started chopping everything.  I added some honey to a ceramic ramekin, then added some GF soy sauce, some rice wine vinegar, some sriracha sauce, and some chicken broth and heated it up in the microwave for about a minute.  When it was hot, I added a ginger tea bag and let it steep.  If I were cooking for BF, I would probably add fresh garlic and just blend everything in the Vitamix until hot, but I was too lazy.  

 

I added the sauce the last minute or so of cooking, when everything was starting to stick to my skillet.

 

It could be made vegan, of course, by swapping chicken broth for veggie broth and swapping out the honey for a different sweetener (to balance out the vinegar).

 

It would be good with cashews or toasted almonds on top, IMO.

Yesterday I had lunch with a friend from work.  She works in a different building, so I don't see her often.  We got caught up on things.

 

Vacation day tomorrow.  Yippy.

 

I recently celebrated a work anniversary and got to pick some gift cards.  They came in the mail today.

1) Did my daily walk for exercise

2) DH (who I am exasperated with right now) is healthy and caring 

3) My IBS has stopped (as soon as I ceased rx’s before colonoscopy)

1.   Granddaughter just came up to me out of the blue...put her arms around me...and said "I Love you Gramma"

 

2. Weather cooled down some and I was able to open the windows and doors for a few hours for a couple days... 

 

3. My Shasta daisies are in full bloom down the side of the garage...

@Drythe@I was only a little sad but I am way over that.They are coming to visit in August so I can’t wait!I actually think they were smart to have the wedding they chose as it was much cheaper and they have money left for their home.They of course were compleley pleased with how everything turned out and that is what matters most.
