      <title>Extremely Hearty Beef Stew</title>

      <description>&lt;P&gt;Looking for an extremely hearty beef stew recipe.&amp;nbsp; I do a lot of cooking for home-bound neighbors and am looking for a hearty stew that has a lot of vitamins and nutrients that I can present them.&amp;nbsp; I know it is warm but these home-bound people may only got one hot meal a day and I want to make it a good one.&amp;nbsp; I have 7 I take food to.&amp;nbsp; I don't eat bread but think that would be nice, don't eat sweets - thinking cookies?&amp;nbsp; Ideas?&amp;nbsp; Not everyone eats lasagne.&lt;/P&gt;</description>

      <description>&lt;P&gt;You ROCK! &amp;nbsp;What a nice person to do that.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;so many recipes but I just get some beef stock, canned tomatoes, slice up a ton of veggies and potatoes (sweet and regular) canned red beans and/or meat. &amp;nbsp;Salt and pepper to taste (or not) bay leaves onion, etc... easy peasy&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;use any grain ( cooked first). Instead of potatoes barley is good and nutritious&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;i have a feeling they will be thrilled with anything u make.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;You can also do the same with chicken noodle soup. &amp;nbsp;Chicken stock, shredded cooked chicken, carrots celery. &amp;nbsp;Cook the past on the side and serve separately, that way the noodles don’t soak up all the broth in the leftoverd&lt;/P&gt;</description>

Simmer, covered, for 2 hours, stirring occasionally.&lt;/LI&gt;&lt;LI&gt;Stir in carrots, halved onions, and potatoes. Return to boiling; reduce heat. Simmer, covered, about 30 minutes more or until meat and vegetables are tender. Discard bay leaf.&lt;/LI&gt;&lt;LI&gt;In a screw-top jar shake together the 1/2 cup cold water and flour until combined. Stir into stew. Cook and stir until thickened and bubbly; cook 1 minute more. Season stew to taste with salt and pepper. Sprinkle each serving with snipped parsley, if desired. Makes 6 servings.&lt;/LI&gt;&lt;/OL&gt;&lt;/DIV&gt;&lt;/DIV&gt;&lt;/DIV&gt;</description>

If you use boxed/canned broths and canned goods you are dealing with high levels of sodium which these people do not need....you could use low-sodium/no-salt broths and canned goods and you will pay extra for "no-salt".&amp;nbsp; &lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="comic sans ms,sans-serif" size="3" color="#0000ff"&gt;&lt;EM&gt;&amp;nbsp;&amp;nbsp; As far as breads, seniors will love a loaf of bread, they can easily make sandwiches with fresh baked breads.&amp;nbsp; Go to King Arthur.com and look for 100% whole wheat, whole-grain, rye, pumpernickel, barley and potato bread recipes.&amp;nbsp; If you have a bread machine, make loaves of bread using their recipes for there are some wonderful whole-grain recipes&amp;nbsp;available for bread machine that are easy &amp;nbsp;You can knockoff 2-3 loaves a day when using the bread machine.&amp;nbsp; &lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="comic sans ms,sans-serif" size="3" color="#0000ff"&gt;&lt;EM&gt;&amp;nbsp; &amp;nbsp; I routinely make home-made bread for a senior couple down the street and take 1-2 loaves at a time, usually whole wheat, mixed grains, rye and/or pumpernickel breads and they are just thrilled. &lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="comic sans ms,sans-serif" size="3" color="#0000ff"&gt;&lt;EM&gt;&amp;nbsp; &amp;nbsp; You could also make a huge pot of vegetable soup, add some beef pieces and clean out your refrigerator of vegetables.....it does not take much to make a huge pot.....use water and seasonings, use no-salt tomatos.&amp;nbsp; This too would go great with home-made breads.&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="comic sans ms,sans-serif" size="3" color="#0000ff"&gt;&lt;EM&gt;&amp;nbsp; &amp;nbsp; How wonderful of you to help where you can for people who are captive to what they get from frozen and/or canned foods which are not nutritious and full of preservatives which are unhealthy.&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;My favorite way to make beef stew:&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;In a large pot cover a chuck roast with water about 2 inches above the meat.&amp;nbsp; Cook low and slow until it's about half cooked.&amp;nbsp; Then I add 2 packages of Lawry's or McCormick's beef stew seasoning packets and a diced onion.&amp;nbsp; Cook the meat a while longer.&amp;nbsp; When it's close to being done, I add sliced carrots and cubed potatoes, and a couple stalks of celery.&amp;nbsp; When the carrots are done, take out the meat and cut it into small bites.&amp;nbsp; Add some frozen peas to the pot.&amp;nbsp; Before I put the meat back in, I make a flour and water paste and thicken the mixture to the consistence you like.&amp;nbsp; Makes a big pot.&lt;/P&gt;&lt;P&gt;I've tried making the recipe on the back of the packet, but it's too spicey for me.&amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;So many wonderful ideas.&amp;nbsp; Never thought of putting sweet potatoes in a beef stew, I like the idea.&amp;nbsp; Except for tomatoes, I try to use fresh.&amp;nbsp; I like unsalted stock, used to make my own but ended up with too much.&amp;nbsp; I think unsalted as people may be salt restricted.&amp;nbsp; I have an 8 qt slow cooker that I use.&amp;nbsp; I do sneak a bowl for myself.&amp;nbsp; I try to make the beef in smaller pieces and plenty of red potatoes.&amp;nbsp; I do start out in a pressure cooker for 20 minutes and move to the crockpot to assure the meat is tender, add potatoes later.&amp;nbsp; Those sweet potatoes sound awesome.&lt;/P&gt;</description>

      <description>&lt;P&gt;Bless you for doing this.&lt;/P&gt;&lt;P&gt;If for seniors or shut ins, I'd go easy on the seasonings but try to include a little of every kind of veggie.&amp;nbsp; &amp;nbsp; Some you can buy frozen, choose all the colors - green, yellow, orange, etc.&amp;nbsp;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;You are very kind&lt;/P&gt;</description>

      <description>&lt;P&gt;Take your favorite beef stew recipe. Take out anything "packaged." Substitute the real thing (as in onions, diced tomatoes, fresh herbs, good beef stock). Now cook some barley and add it at the end. Also, add spinach or chopped, steamed kale at the end of the cooking.&amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;I will not do chicken noodle soup if they have to add water.&amp;nbsp; A good chicken casserole/pot pie.&amp;nbsp; The heartier the better.&amp;nbsp; Lots of good veggies.&amp;nbsp; I have chicken ideas, beef was the issue.&amp;nbsp; I really like the idea of the sweet potatoes in that beef stew.&amp;nbsp; A different texture and taste.&amp;nbsp; Hide some kale and spinach in it as most of my friends don't appreciate the taste of kale, heavy spices, too many onions.&amp;nbsp; Gets a little tough.&lt;/P&gt;</description>

I took many meals during the past 14 years to mom and her tablemates! They would read the menus and say, "Help us out on Thursday for dinner. The menu is awful." Many of the ideas posted above, I learned to incorporate. (I also included a few lentils, red and black beans in their meals. Some could eat them; others could not.) The colorful vegetables are the most important part, along with the tender protein of the meat or chicken. So glad you are watching their intake of salt and avoid canned/processed items. It makes a huge difference! Custard and quich (with cheese &amp;amp; broccoli) were other favorites. I made my own cornbread and various muffins and banana breads, etc. The favorite dessert was homemade cheesecake. I have access to free-roaming chickens, half-and-half and eggs from an excellent Farmer's Market!
