Set the bacon aside to drain for later use.
Saute the peppers and the onion in the bacon fat until just tender – about 3 minutes. Set aside.

Warm the broth and whisk or stir in the tomato paste.

In a heavy bottom pot (that has a lid) pour the broth/tomato mixture and heat to a boil. Mix in the rice, the vegetables, and the salt and stir.
Turn down the heat and cover with lid. Simmer on a low heat for about 40-45 minutes or until all liquid is absorbed. You can do this by tilting the pot to the side and see if any liquid is still in the bottom of the pot.

When you are reasonably assured all liquid has been absorbed, remove the lid and allow to sit for about 5 minutes off the heat. Then carefully fluff with a fork. The rice will be tender and slightly creamy. Serve immediately with crumbled bacon on top and hot sauce on the side, if desired. Serves 4-6.

Next ingredient: Sweet potatoes

Heat a large nonstick skillet with a little bit of oil over high heat . Add the onion and peppers, sprinkle with chili and cumin, and stir, rest, stir, rest until you get a nice browning on the outside of the peppers. Remove and set aside. Repeat the roasting process with the corn, sprinkling with chili and cumin, removing from the heat when browned and roasted on the outside. Sprinkle the roasted veggies with a little bit of salt and toss to coat.

Prep the ingredients: Grease a 9x13 inch baking pan and preheat the oven to 400 degrees. Cut the tortillas into thin strips. Put the refried beans in a bowl and mix with a little bit of water to make them easier to spread.

Assemble: Spread a little bit of sauce on the bottom of the pan. Layer in order: half of the tortilla strips, ALL the beans, half of the veggies, half of the sauce, half of the cheese. Cover with the other half of the tortilla strips, veggies, sauce, and cheese.

Bake: Cover with foil (I usually spray mine with cooking spray) and bake for 15-20 minutes, until the sauce is bubbling and the cheese is melted.
