Fine dining chefs use microgreens to enhance the attractiveness and taste of their dishes with their delicate textures and distinctive flavors. Smaller than “baby greens,” and harvested later than sprouts, microgreens can provide a variety of leaf flavors, such as sweet and spicy. They are also known for their various colors and textures. Among upscale markets, they are now considered a specialty genre of greens that are good for garnishing salads, soups, plates, and sandwiches.

I grow them and sell them from my farmstand, they are really catching on. Arugula is much tastier as a micro green that full grown. Actually micro greens have been around for awhile, we grew them years ago when I worked for a share of produce on a local farm.

I'll take microgreens if someone wants to put them on my plate, but for now I'm just too hungry

Hi @PA Mom-mom

I am very big on fiber, I get a lot. I don't think greens give us much fiber, for example, a cup of spinach only gives us 0.7 grams. An average apple would give us 4.4 g. Lentils are 16.3 g a cup, artichokes 10.3 g, a large Romaine leaf 0.6 g.

I eat 1/2 cup of steel cut oats and mixed berries or blueberries for breakfast, and usually have one meal with 1/2 cup barley diuring the day. Apples are fine, but I prefer berries. My brother is an endrocrinologist, and he explained to me the benificial aspects of leafy greens.they help with absorbing other nutrients, like calcium. I'm certainly not a scientist, so I can't speak to it. I do know that my daily consumption of cabbage, brussels sprouts, cauliflower, broccoli rabe and kale certainly seem to be keeping me healthy.
