    <description>&lt;P&gt;&lt;FONT size="1 2 3 4 5 6 7"&gt;I make Spanish and Puerto Rican food and I use Saffron in yellow rice and Spanish bean soup.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="2"&gt;&lt;STRONG&gt;Saffron Yellow Rice &lt;/STRONG&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;INGREDIENTS:&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="1 2 3 4 5 6 7"&gt;3 tablespoons olive oil&lt;BR /&gt;1 cup onion, finely chopped&lt;BR /&gt;1/4 cup green pepper, finely chopped&lt;BR /&gt;1/4 cup red pepper, finely chopped&lt;BR /&gt;2 cups rice&lt;BR /&gt;1 teaspoon salt&lt;BR /&gt;4 cups chicken broth&lt;BR /&gt;8 saffron strands crushed and dissolved in a small amount of hot water&lt;BR /&gt;3 tablespoons butter&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="1 2 3 4 5 6 7"&gt;Heat olive oil in a large saucepan and sauté onions and peppers until translucent. Stir in rice and salt and sauté briefly, until the rice begins to brown slightly. &lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="1 2 3 4 5 6 7"&gt;Add chicken broth and saffron water, and bring to a boil. Lower heat and cook, covered, for about 20 to 30 minutes. (Perfectly cooked rice will be tender and fluffy.) &lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="1 2 3 4 5 6 7"&gt;Just before serving, stir in 3 tablespoons butter. &lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="1 2 3 4 5 6 7"&gt;&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="1 2 3 4 5 6 7"&gt;&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="1 2 3 4 5 6 7"&gt;&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;I've just used it in rice.&amp;nbsp; It's generally used in Indian cooking.&amp;nbsp; I used to get it fairly inexpensively at Trader Joes. &amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;DH makes an amazing paella dish. &amp;nbsp;He uses saffron his parents brought back from Spain. &amp;nbsp;It adds beautiful flavour to seafood, chicken and sausage in the dish. &amp;nbsp;LM&lt;/P&gt;</description>

      <description>&lt;P&gt;I use it in Spanish dishes, mainly rice and shrimp dishes.&amp;nbsp; Because it's so expensive, I'm really stingy with the amount I use!&lt;/P&gt;</description>

      <description>&lt;P&gt;i get my saffron from overseas. i usually store it in the freezer.&lt;/P&gt;&lt;P&gt;i use it in soups, rice, stews, egg dishes.....it can even be used in a rice pudding that has rosewater and saffron.&lt;/P&gt;&lt;P&gt;it is definitely a staple in my home.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;i have crushed the threads using a mortar and pestle, put it in a glass jar, and taken a glass jar and added hot water to the saffron. it can then be stored easily in the refrigerator and used as needed in this liquid form.&lt;/P&gt;</description>
