When I was a kid, my grandmother made the best teacakes ever! My mother never had the recipe and we searched high and low through all of my grandmother's recipe boxes after her death looking for that recipe. I have decided she must have made them from memory. Why I never thought to ask her before she passed away, who knows! Anyway, they were like a big brown soft cookie. I know she used either molasses or ribbon cane syrup ( a Southern thing, which they always had on hand because my grandfather loved that stuff on biscuits for breakfast). I'm wondering if anyone has a recipe that sounds close to what I am trying to describe.

Hi, 2 thoughts on the Molasses/Ginger front. 1) Hermits, soft cakey cookie formed in large rounds or bars. (The debate on shape can be Passionate in some parts!) It's a spice cookie which sounds like it would fit the bill. 2) this one is a real Cake but if you want a cake with a goodly kick of ginger and molasses look up " Irish Black Ginger Cake" the black is because it is dark with molasses and coffee. SO GOOD! Serve it in thin slices with a side of whipped cream as It's Rich and sweet enough without frosting.
