My scalloped potato recipe is similar to those already posted. However, since you said you wanted to use up a bag of potatoes and some ham, I'm sharing a recipe for Ham and Potato Casserole. It is really easy to make and super good. I found it on a food blog and she includes some helpful hints about the recipe. If you click on the recipe title, it will take you directly to that page.

Ham and Potato Casserole

4 to 6 Servings

3 large potatoes, peeled and thinly sliced

ham, cooked and diced

1 (8 oz.) pkg. Cheddar cheese, grated

salt and pepper to taste

3 eggs

3/4 cup milk

3/4 cup half and half

2 Tbsp. all-purpose flour

In a greased 2-quart casserole dish, alternate layers of potatoes, ham and cheese three times. Sprinkle salt and pepper over the cheese. Combine the remaining ingredients and pour over the top. Bake at 350° for 1 hour 15 minutes or until the potatoes are tender. If the top gets too brown, cover the pan with foil.

If you are not a good cook, Betty Crocker makes about a half dozen box mixes for scalloped potatoes, au gratin, etc.

I'm not a big enough fan of scalloped potatoes to ever make them from scratch personally. I've used the boxed mix before, family ate it up.

@tends2dogs

<STRIKE>you can and then add some more on the top if you want lots of cheese. The scalloped potato is prettying forgiving. If it is drying out too much in the oven you can add a little more milk or cream.</STRIKE>

<STRIKE>you can see a similar recipe if you look up old fashioned scalloped potatos.</STRIKE>

@tends2dogs this is hands down the best and easiest recipe for scalloped potatoes. It is a legend on these boards:

Aunt Bertie's Scalloped Potatoes

Thinly slice enough raw Russet potatoes to fill a baking casserole the size you need. I use a deep corning ware dish. The number of potatoes you use depends on the number of people you are serving, but do not make for fewer than four, as the method won't work. Use Russet potatoes or it won’t turn out right.

Salt the potatoes lightly if desired.

Pour enough heavy cream over the top of the potatoes to come within one inch BELOW the top of the potatoes.

That's it ladies, just two ingredients, potatoes and cream. You'll find that people will swear that you put cheese in them. They come out thick and rich and delicious.

Bake at 350 degrees for 1 to 2 hours, depending on size of dish. They should be crusty brown on top and tender when pierced with a knife.

This recipe is exactly how my Grandmother taught me to make them,

I do add onions to mine. If i don't have heavy cream on hand I have made it with evaporated milk and they came out great.

I have also added chunks of ham if I have it in the house. I like it with the ham too.

My kids loved it, & now my grandkids do too.

I give you props for posting it, G, as it has (horrors!) cream of soup.

My recipe is slightly different, as it calls for cream of chicken soup and chopped green onions.

A bit of background:

Our family calls these potatoes "Mrs. Bailey's Potatoes", because when I was a very young mom, a quite elderly Mrs. Bailey gave me her recipe - after I'd tasted them at a pot luck.

What was worth noting, is that she'd made them in a crock pot - minus the cornflake crumbs, & they were delicious!

Anyway, I often use the crock pot when making them, as it frees up the oven for other things.

Once the Internet materialized, I was surprised to see how many people make these potatoes!

One year at holiday time when I wanted to make them, almost every store was sold out of the frozen hash brown (cubes).

I kept running into the same women, store after store, because we were all making the same recipe.
