      <title>FAUX CAESAR</title>

      <description>&lt;P&gt;Occasionally I get a craving for Caesar dressing.&amp;nbsp; I am leery of raw eggs and I don't want to buy pasteurized eggs.&amp;nbsp; I usually end up purchasing some made in house at my local gourmet market but it is more dressing than I want.&amp;nbsp; Ran into this recipe that uses mayo in place of the raw eggs.&amp;nbsp; I thought it was pretty good for a recipe that is just using what you have on hand.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;EM&gt;1 small garlic clove, minced&lt;BR /&gt;4 olive oil packed anchovy fillets, drained&lt;BR /&gt;1 T fresh lemon juice&lt;BR /&gt;1 T red wine vinegar&lt;BR /&gt;1/4 cup extra-virgin olive oil&lt;BR /&gt;2 T mayonnaise&lt;BR /&gt;1/4 cup finely grated Parmesan cheese&lt;/EM&gt;&lt;/P&gt;&lt;P&gt;&lt;EM&gt;Kosher salt and freshly ground black pepper&lt;/EM&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;EM&gt;In a blender or food processor puree the garlic, anchovies, lemon juice, vinegar, olive oil and mayonnaise until smooth.&amp;nbsp; Add the cheese and pulse a few times,&amp;nbsp; Salt and pepper to taste.&amp;nbsp; &lt;/EM&gt;&lt;/P&gt;</description>
