    <description>&lt;P&gt;Prep time: 10 min.  Cooking Time:  15 min.  Makes:  4 servings&lt;/P&gt; &lt;P&gt;4 small boneless skinless chicken breast halves (1 1/4 #)&lt;/P&gt; &lt;P&gt;1 cup Thick 'N Chunky Salsa&lt;/P&gt; &lt;P&gt;1 pkg. Taco seasoning mix (2.5 oz)&lt;/P&gt; &lt;P&gt;2 cups &lt;SPAN style="text-decoration: underline;"&gt;each&lt;/SPAN&gt; water and Minute White Rice, Uncooked&lt;/P&gt; &lt;P&gt;1 can (8 oz) whole kernel corn, drained or I used 1 cup of frozen corn&lt;/P&gt; &lt;P&gt;1 cup shredded cheddar cheese&lt;/P&gt; &lt;P&gt;sliced black olives (optional)&lt;/P&gt; &lt;P&gt;Bring chicken, salsa, taco seasoning mix and water to boil in a large skillet; cover.  Simmer 10 minutes.  Return to boil.  Stir in Minute Rice.  Sprinkle with cheese (and optional olives- I used small can sliced) cover.  Cook on low heat for 5 minutes. &lt;/P&gt; &lt;P&gt;It makes the chicken so tender and juicy.  I usually serve with green salad.  My DH loves this.  I do variations - so for instance - blended cheeses, or add a couple of dashes of hot sauce, even different levels of heat on the salsa.
