    <description>&lt;P&gt;I will preface this by saying I am not a gourmet chef by any means! LOL~keep in mind too that I didn't note any particular amounts as it is all based on what you like and how much you want - pretty flexible as it is mostly to taste.&lt;/P&gt; &lt;P&gt;I came up with this super easy idea while trying to make something for my husband for dinner that would incorporate my Nutrisystem diet.&lt;/P&gt; &lt;P&gt;* Can of chili (any kind - vegetarian, beef, turkey etc.)&lt;BR /&gt; * Can of petite diced tomatoes&lt;BR /&gt; * Large green, red, yellow or orange peppers (how many you want is up to you - I allowed one whole pepper or two halves for each person)&lt;BR /&gt; * Fat free cheddar cheese shreds&lt;BR /&gt; * Fat free (or light) sour cream&lt;/P&gt; &lt;P&gt;- Cut the peppers in half lengthwise, clean them out, rinse and place in a baking dish.&lt;BR /&gt; - Spoon some petite tomatoes into pepper halves.&lt;BR /&gt; - Spoon some chili into pepper halves.&lt;BR /&gt; - Spoon more tomatoes to top up the pepper halves.&lt;BR /&gt; - Sprinkle fat free cheddar cheese shreds to taste on top.&lt;BR /&gt; - Pour a small amount of water into bottom of baking dish so peppers don't stick.&lt;BR /&gt; - Loosely cover in foil and bake at about 375 degrees for 40 minutes.&lt;BR /&gt; - Remove foil and continue baking until peppers are tender and cheese is bubbling (about&lt;BR /&gt; another 10-15 minutes).&lt;/P&gt; &lt;P&gt;When finished place peppers on dinner plate, spoon a bit of fat free sour cream on top and serve with a crisp garden salad.&lt;/P&gt; &lt;P&gt;My husband demolished his so fast - he politely requested I make this again soon.&lt;BR /&gt; It was a lot easier than regular stuffed peppers as it eliminated the need to brown meat and onions first and no extra carbs from the rice.&lt;BR /&gt; &lt;BR /&gt; Also for my NS diet I put a beef and pasta NS meal into my peppers instead of the chili. You could really use any kind of filling - the sky's the limit!
