      <title>CUCUMBER SANDWICHES</title>

      <description>&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;A different way to make cucumber&amp;nbsp;sandwiches.&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;1 8 oz cream cheese, softened&lt;BR /&gt;1/3 cup mayonnaise&lt;BR /&gt;1 med cucumber, peeled, seeded and diced&lt;BR /&gt;1/2 t fresh dill weed,&amp;nbsp;&amp;nbsp;finely chopped&lt;BR /&gt;10 slices white bread&lt;BR /&gt;10 slices wheat bread&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;Process cheese and mayo in a blender or food processor until smooth, stopping to scrape down the sides.&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;Combine cream cheese mixture, cucumber&amp;nbsp;and dill weed in a bowl.&amp;nbsp;&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;Spread cucumber mixture evenly&amp;nbsp;onto white bread slices and top with wheat bread slices. &amp;nbsp;Using a 2 to 3 inch round cutter, cut sandwiches, discarding the edges. &amp;nbsp;Serve soon after making. &amp;nbsp;&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;I did not have enough mixture for 10 slices of bread. &amp;nbsp;Maybe I should have spread it thinner? &amp;nbsp;I did not measure the dill weed just chopped it and threw it in. &amp;nbsp;I added a garnish of basil leaves and cherry tomatoes on plate. &amp;nbsp;&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;</description>

      <description>&lt;P&gt;Hearing about cucumber sandwiches makes it sound so fresh and healthy! Not! I wish there was a way to make them so theres not so much mayo and cream cheese but I guess thats what makes them enjoyable.       <description>&lt;P&gt;Sounds very refreshing.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;I must recommend seedless cucumbers. I make a German cucumber dish with cukes, tomatoes, onions, sour cream, etc., and always use the seedless because not only are there no seeds to get rid of, but there's less water and more cucumber, and in dishes with sour cream, that matters.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Seedless cukes are more expensive than the standard variety, but look for sales as the weather warms up. I was finding them for less than $1 each last year.&lt;/P&gt;</description>
