    <description>&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;I had friends in So Cal that owned an upscale Chinese restaurant years ago in Newport Beach. &amp;nbsp;They made fortune cookies and almond cookies every week to use as dessert. &amp;nbsp;I have not used the almond cookie recipe in years but decided to add to my cookies this Christmas. Very easy to make and it got rave reviews.&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;1-1/4 cup Lard&lt;BR /&gt;1 cup sugar&lt;BR /&gt;2 eggs, divided&lt;BR /&gt;1 t almond extract&lt;BR /&gt;3 cups flour&lt;BR /&gt;1 t baking soda&lt;BR /&gt;1/2 t salt&lt;BR /&gt;Blanched almonds&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;Sift flour, salt and baking soda together.&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;Cream lard, sugar, 1 egg, and almond extract together. &amp;nbsp;Add dry ingredients and mix well.&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;Form into 1 inch balls and place on an ungreased cookie sheet. &amp;nbsp;Make an indentation in center and place 1 almond in center of cookie. &amp;nbsp;Brush with beaten egg.&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;Bake at 350 for approximately 20 minutes depending on your oven. &amp;nbsp;&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;</description>
