    <description>&lt;P&gt;&lt;EM&gt;&lt;STRONG&gt;Carnitas... stove top method&lt;/STRONG&gt;&lt;BR /&gt;&amp;nbsp;&lt;BR /&gt;2 lbs pork loin.... cubed&amp;nbsp;&lt;BR /&gt;1 cup lard&lt;BR /&gt;About 6 to 8 cups of water ( just enough to cover the meat )&lt;BR /&gt;1 table of salt&lt;BR /&gt;3 clove of garlic or garlic powder&amp;nbsp;( optional )&lt;BR /&gt;In a large pot over medium heat place all the ingredients and cover until it comes to a boil&lt;BR /&gt;Reduce to medium low and simmer for 45 mins&lt;BR /&gt;After 45 mins uncover and turn heat to a medium heat to reduce the liquid ( 20 to 25 mins )&lt;BR /&gt;Start to check it at about 5 to 10 mins&lt;BR /&gt;The meat will start to fry in its own fat and lard at this point&lt;BR /&gt;Carefully brown the meat at medium low until the pork is evenly browned about 15 to 20 mins&lt;BR /&gt;At this point be careful not to overcook or you will get a very dry meat&lt;/EM&gt;&lt;/P&gt;&lt;P&gt;&lt;EM&gt;serve as tacos&lt;/EM&gt;&lt;/P&gt;</description>

      <description>&lt;P&gt;&lt;FONT size="3" color="#800080"&gt;Sounds great! I love Carnitas.. I posted this stove top recipe a couple of years ago, when I had a different nic.. Lots of &amp;nbsp;folks seemed to like it- it is similar to yours nad you reminded me of it, so I thought I would &amp;nbsp;re-post it..&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="2" color="#000080"&gt;I love&amp;nbsp;&lt;STRONG&gt;carnitas&lt;/STRONG&gt;- and this is the best and easiest way to make them- kind of like magic- I have even done it in my pressure cooker (mine has a browning element)&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="2" color="#000080"&gt;Sorry its not a more "formal" recipe...&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="2" color="#000080"&gt;Take a 3-4 lb boston butt (shoulder) and cut it into large chunks- do not remove fat- put it in a dutch oven with 2 cups water, 2 tsp salt, 1 cup orange juice and 3-4 cloves whole peeled garlic- Bring to boil, then reduce to simmer for 2 hours, uncovered- Once your 2 hours are up, turn the heat up - it will take about 30 minutes, or so, but eventually the liquid will reduce and evaporate- keep an eye on it- the object is to now "fry" the meat in the dutch oven (this is why you left the fat on it)- so once it gets to the point that it starts to sort of stick to the bottom of the pan, start stirring, so it doesn't stick and burn- once it is caramelized and crispy around the edges- its done- serve it in a flour tortilla with lime and whatever-&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="2" color="#000080"&gt;&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="2" color="#000080"&gt;Yum...&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="2" color="#800080"&gt;Tam&lt;/FONT&gt;&lt;/P&gt;</description>
