    <description>&lt;P&gt;I pulled this from my files for dinner this evening. &amp;nbsp;I've had the recipe so long I do not remember the source. &amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Summertime Salad&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;BR /&gt;Serves 8 to 10&lt;BR /&gt;&lt;BR /&gt;2 &amp;nbsp;5 ounce packages romaine lettuce, chopped&lt;BR /&gt;1 head iceberg&amp;nbsp;lettuce, chopped&lt;BR /&gt;1 cup shredded Swiss&amp;nbsp;cheese – mozzarella or any other cheese can be substituted&lt;BR /&gt;1/2 cup sweetened dried cranberries (Craisins are fine)&lt;BR /&gt;1 cup unsalted cashews (chunky pieces, not crushed)&lt;BR /&gt;2 Granny Smith apples, peeled and diced&lt;BR /&gt;2 Red Delicious Apples, peeled and diced&lt;BR /&gt;2 Pears, peeled and diced&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Combine all ingredients in a large serving bowl; toss to mix.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Lemon Poppy Seed Dressing&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;1/3 cup plus 2 Tablespoons apple cider vinegar&lt;BR /&gt;1/4 cup plus 1 Tablespoon fresh lemon juice&lt;BR /&gt;1 tablespoon plus 2 teaspoons Dijon mustard&lt;BR /&gt;1 tablespoon plus 2 teaspoons honey&lt;BR /&gt;1 1/4 teaspoons onion powder&lt;BR /&gt;½ teaspoon kosher salt&lt;BR /&gt;1 1/4 cups grapeseed oil&lt;BR /&gt;1/4 cup plus 1 Tablespoon poppy seeds&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Whisk together vinegar, lemon juice, mustard, honey, onion powder and salt in a bowl. Slowly drizzle in grapeseed oil, whisking constantly, until combined. After an overnight soak, the apples did absorb a little of the lemon flavor, but not enough to adversely&amp;nbsp;affect them. &amp;nbsp;There was a little beige on the outside of the Red Delicious apple, which could have easily been sliced off, but it did not bother me.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT face="verdana,geneva"&gt;The real change from last night to this afternoon was in the Lemon Poppy Seed Dressing. &amp;nbsp;It 'ripened'&amp;nbsp;into a delicious dressing, actually making the salad &lt;EM&gt;better&lt;/EM&gt; this afternoon than it was last night! &amp;nbsp;DH and I score recipes on a 1-5 basis. &amp;nbsp;Last night's salad was a 3☆ rating. &amp;nbsp;Today's lunch was 4☆s.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT face="verdana,geneva"&gt;I hope I have helped, wanting to be sure to be clear, but will shut up now about this salad. &amp;nbsp;&lt;img id="womanembarrassed" class="emoticon emoticon-womanembarrassed" src="https://community.qvc.com/i/smilies/16x16_woman-embarrassed.png" alt="Woman Embarassed" title="Woman Embarassed" /&gt; &amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;</description>
