      <title>SPICY SAUSAGE PASTA</title>

      <description>&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;This is definitely not a warm weather meal but it is a cozy meal on a rainy night.&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;1 T olive oil&lt;BR /&gt;1 pound kielbasa or smoked polish sausage, sliced&lt;BR /&gt;1-1/2 cups diced onions&lt;BR /&gt;2 cloves garlic, minced&lt;BR /&gt;2 cups chicken stock&lt;BR /&gt;1 10 oz can RoTel diced tomatoes with green chilies&lt;BR /&gt;1/2 cup heavy cream&lt;BR /&gt;8 oz uncooked penne pasta&lt;BR /&gt;1/2 t salt&lt;BR /&gt;1/2 t pepper&lt;BR /&gt;1 cup shredded Monterey Jack cheese&lt;BR /&gt;1/3 cups thinly sliced green onions&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;In an oven safe skillet heat olive oil until very hot. &amp;nbsp;Add the sausage and onions. &amp;nbsp;Cook until lightly browned. &amp;nbsp;Add the garlic and cook 30 seconds. Add the chicken stock, RoTel tomatoes, cream, pasta, salt and pepper. &amp;nbsp;Stir and bring to a boil. &amp;nbsp;Cover and reduce heat to low. &amp;nbsp;Simmer until the pasta is tender (about 15 minutes). &amp;nbsp;Remove from the heat and stir in 1/2 of the cheese. &amp;nbsp;Top with remaining cheese and green onions. &amp;nbsp;Place under the broiler for a few minutes until the cheese is melted, browned and bubbly. &amp;nbsp;&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>
