Ummm...we grown-ups think they're pretty good eating too. &lt;IMG src="https://community.qvc.com/DesktopModules/ExactTarget/Controls/TextEditor/jscripts/tiny_mce/plugins/emotions/img/wink.gif" alt="Wink" /&gt;&lt;BR /&gt; &lt;BR /&gt; &lt;BR /&gt; MONKEY MUFFINS&lt;BR /&gt; (Source: adapted from Simple and Delicious magazine Sept./Oct. 2009)&lt;BR /&gt; &lt;BR /&gt; 1/2 c. butter, softened&lt;BR /&gt; 1 c. plus 1 Tbsp. sugar, divided&lt;BR /&gt; 2 eggs&lt;BR /&gt; 1 c. mashed very ripe bananas (about 3 medium)&lt;BR /&gt; 2/3 c. peanut butter&lt;BR /&gt; 1 Tbsp. milk&lt;BR /&gt; 1 tsp. vanilla extract&lt;BR /&gt; 2 c. all-purpose flour&lt;BR /&gt; 1 tsp. baking soda&lt;BR /&gt; 1/2 tsp. salt&lt;BR /&gt; 3/4 c. miniature semisweet chocolate chips&lt;BR /&gt; &lt;BR /&gt; Preheat oven to 350 degrees. Grease mini muffin pans or line with paper liners; set aside.&lt;/DIV&gt; &lt;DIV&gt; &lt;/DIV&gt; &lt;DIV&gt;&lt;SPAN style="font-family: Arial;"&gt;Cream butter and 1 c. sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.&lt;/SPAN&gt;&lt;/DIV&gt; &lt;DIV&gt; &lt;/DIV&gt; &lt;DIV&gt;&lt;SPAN style="font-family: Arial;"&gt;Beat in bananas, peanut butter, milk and vanilla.&lt;BR /&gt; &lt;BR /&gt; Combine flour, baking soda and salt; add to creamed mixture, stirring until just moistened-do not overmix. Fold in chocolate chips.&lt;BR /&gt; &lt;BR /&gt; Fill prepared pans 3/4 full; sprinkle with remaining 1 Tbsp. sugar.&lt;BR /&gt; &lt;BR /&gt; Bake @ 350 degrees for 14-16 minutes, or until a toothpick inserted comes out clean.&lt;BR /&gt; &lt;BR /&gt; Cool for 5 minutes before removing from pans to wire racks to cool completely.
