    <description>&lt;P&gt;Hi &lt;a href="https://community.qvc.com/t5/user/viewprofilepage/user-id/78932"&gt;@LoLa﻿&lt;/a&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;I have missed you and your recipes!&amp;nbsp; So good to see you!&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;This sounds wonderful!&amp;nbsp; I love spiralizing too!&amp;nbsp; Never thought to put them in soup which is a huge staple in my diet!&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Fabulous recipe!&amp;nbsp; Thanks for sharing with us!&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;As soon as I can figure out where to store one...I want to upgrade to a better/bigger spiralizer! My hand held Veggetti is difficult for some items like Sweet Pots...and my hand is getting a little tired!&amp;nbsp; LOL&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;We have an Italian market nearby that sells soup size mini meatballs!&amp;nbsp; I buy them all the time since they are so convenient!&lt;/P&gt;</description>

Plus, it gives me reason to use my spiralizer and that's always fun.&lt;/FONT&gt;&lt;/EM&gt;&lt;/P&gt;&lt;P&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;2 medium carrots, diced&lt;/FONT&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;2 celery sticks, diced&lt;/FONT&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;1 medium potato, diced&lt;/FONT&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;2 tablespoons olive oil, divided&lt;/FONT&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;1lb meatballs, fresh or&amp;nbsp;frozen (If frozen, no need to thaw)&lt;/FONT&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;2-3 garlic cloves, pressed&lt;/FONT&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;32oz low sodium chicken, beef or veggie broth&lt;/FONT&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;2 cups water&lt;/FONT&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;1 dried bay leaf&lt;/FONT&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;A few sprigs of thyme&lt;/FONT&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;1 teaspoon salt&lt;/FONT&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;½ teaspoon black pepper&lt;/FONT&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;2 small zucchinis (spiralized as noodles)&lt;/FONT&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;1 tablespoon chopped parsley&lt;/FONT&gt;&lt;BR /&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;in a Dutch oven, heat 1 tablespoon of olive oil over medium high heat. Add the meatballs and brown on all sides. (It doesn't have to be completely cooked at this point.) Remove on to a plate.&lt;/FONT&gt;&lt;BR /&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;In the same Dutch oven, heat the remaining 1 tablespoon of olive oil. Add garlic, carrots, potatoe and celery and sauté for 2 minutes, stirring occasionally.&lt;/FONT&gt;&lt;BR /&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;Add broth, water, bay leaf, thyme, salt and pepper. Bring it to a boil. Reduce the heat to medium and simmer for 10-15 minutes, or until the vegetables are tender. Meanwhile, spiralize the zucchini into noodles.&lt;/FONT&gt;&lt;BR /&gt;&lt;BR /&gt;&lt;FONT color="#003366" face="comic sans ms,sans-serif"&gt;Add meatballs and continue to cook until they&amp;nbsp;are cooked through. Then add and zucchini and cook until zucchini is softened, no longer than 5 minute. Remove bay leaf and thyme sprigs. If desired, throw in some chopped parsley. Serve immediately.&lt;/FONT&gt;&lt;/P&gt;</description>
