I just made this last weekend. It was very good, easy and well received by guests.

Wegman's has cleaned, chopped Cauliflower in a bag already. Sometimes I purchase those to save time and mess of a big head.

Roasted Cauliflower and Aged White Cheddar Gratin serves 4

1 large head cauliflower, cut into florets

2 tablespoons oil

salt and pepper to taste

3 tablespoons butter

3 tablespoons flour (rice flour for gluten-free)

1 1/2 cups milk

1/4 teaspoon nutmeg, optional

salt and pepper to taste

1 cup aged white cheddar cheese, shredded

1/2 cup panko bread crumbs (gluten free for gluten free)

Toss the cauliflower florets in the oil along with the salt and pepper and arrange them in a single layer on a large baking sheet.

Roast the cauliflower in a preheated 400F/200C oven until lightly golden brown, about 20-30 minutes.

Melt the butter in a saucepan over medium heat, mix in the flour and let cook until it just starts to brown a little.

Mix in the milk, nutmeg, salt and pepper and cheese and heat until the cheese melts and the sauce thickens.

Mix cauliflower into the bechamel sauce, pour into a baking dish and top with the bread crumbs.

Bake in a preheated 350F/180C oven until it is bubbling on the sides and golden brown on top, about 15-20 minutes.

Tip: Make sure to brown the butter and then cook the flour in the butter until it starts to brown to get more flavour in the bechamel sauce and ensure that there is no flour-y taste.

Alternatives
Bacon: Smoky bacon or even pancetta would be a great addition and for the daring, replacing the butter in the bechamel sauce with bacon grease would add even more smoky, bacon-y goodness!

Mushrooms: Sautéed mushrooms or dried porcini mushrooms would also be amazing in this gratin!

Bacon and Mushroom: Combine all three to make something even more decadently delicious!

I suggest Ree Drummond's (Food Network's Pioneer Woman) cauliflower soup. It's DELICIOUS, easy, fast, and the recipe makes a big pot - plenty for leftovers. I find myself craving this soup. I made it tonight, actually. I skip the sour cream step, myself. It's rich and yummy without.

I just made some in the air fryer but you could also pop it into an oven.

I dropped the florets I had steamed for a few minutes into an egg wash and then coated them in bread crumbs (I used panko), parmesan and whatever spices you like.

Pop it in the oven and roast until brown, very good!

My kids request Frosted Cauliflower every time we have a dinner together. It's very easy, but not for the faint of heart.

Core a large head of cauliflower. You can leave it whole and microwave steam it until tender. Drain the water.

Mix together 1/2 cup mayo, 1 or 2 tea French's yellow mustard, pinch of garlic and onion powder, salt and pepper to taste. I like white pepper.

Frost the cauliflower with this mixture. Then cover with 1 or 1 1/2 cups shredded medium cheddar cheese. Put it back in the microwave until melted.

I've made this so many times that I don't have actual amounts. I just eyeball it. Depends on the size of the cauliflower.

I love cauliflower. I roast mine, just cut into small florets and toss with olive oil. Put on nonstick baking sheet and toss with spices--I like salt, pepper, granulated garlic and red pepper flake. Roast at 450 for 25 minutes. It gets caramelized and crispy and delicious. Great accompaniment to chicken or beef main dish.

I have been intrigued by cauliflower mash and the cauliflower pizza crust but I am intimidated because it does look so labor intensive and easy to mess up. Anyone out there do this have any tips?

I use cauliflower in the recipe for broccoli salad made with raisins, nuts, bacon, red onion and the mayo/white vinegar and sugar dressing.

I like macadamia nuts so I use them and I am not a huge fan of raisins and sometimes use dried cran-raisins or something similar.

Play with it.

My grandmother used to make cream cauliflower made with flour, butter, cream and black pepper. OMG!

We LOVE cauliflower and potato soup. I steam or microwave the cauliflower and potatoes, make a light cream sauce with butter, flour, and low-fat milk, then put the chopped potato and cauliflower in that, add more liquid if needed, and blend it a little with a blender or stick blender. I like to leave some nice chunks in it, not puree it smooth--although that is good too. I start the roux with a little chopped onion or even better LEEK!!!! Salt and pepper and you're in business!
