I originally posted this recipe about 4 or 5 years ago, but I made it today and thought it was worthy of posting it again for those who want a refreshingly light but no guilt key lime pie. It's perfect for these dog days of heat and humidity.

My daughter is a type 1 diabetic and always on the lookout for diabetic friendly recipes. She's been making this Key Lime Pie, and everyone who tastes it loves it! It's the perfect time of the year to share it with you all... (p.s.) Once you've tried this, you can swap the sugar-free jello flavors and yogurts and make many delicious other pies..such as orange cream, lemon or tropical flavors) It's such a refreshing pie without all the guilt.

Diet/Diabetic *Key Lime Pie*

1 package sugar-free lime jello

1/4 cup boiling water

2 cartons (about 6 oz size.)

Thanks very much for this. Both DH and I are Type 2 Diabetics, and it's often difficult to find good, tasty recipes that don't include a lot of sugar or sugar alcohol. I watch for them every day. Hope more will be posted in the future.

Thank you for posting! I am a type II, and living in Florida, this is on virtually every menu-made with condensed milk, I dare not even so much as taste! I will make this during the upcoming week. Now then, I really wish the makers of Jello instant no-sugar-added would take the aspartame out and use stevia instead. FYI, I have found instant pudding mixes that use Stevia ( on Amazon in the grocery section) I have yet to try them, but I can tell you from using the Jello no-sugar-added, it is absolutely delicious when combined with Greek yogurt-especially the cheesecake variety. I use ******e and I add about a quarter cup of almond milk just to make it a little easie to blend:: you can skip the almond milk if you want. Once again, THANK you,

Poodlepet2
