Beat 3 minutes on high speed and set aside.</P> <P>Preheat oven to 350.</P> <P>In a 9" deep dish pie plate, melt 1/4 cup butter or margarine. Sprinkle 1/2 cup brown sugar evenly over the melted butter. Place one pineapple ring in center. Then cut 2 more rings in half. Arrange halves around center ring in a pinwheel fashion. I usually cut another ring into pieces and cover the whole top. Cut maraschino cherries in half and place inside pineapple rings.</P> <P>Spoon batter on top and spread evenly. Bake 40 - 45 minutes.</P> <P>Invert onto a plate. Leave pie plate over cake for a few minutes to allow all of topping to come loose before taking pie plate away.</P> <P>P. S.
