    <description>&lt;P&gt;a few weeks ago, i made coconut shrimp and it turned out fantastic.&lt;/P&gt; &lt;P&gt;so i decided to try my hand at making coconut chicken strips.&lt;/P&gt; &lt;P&gt;i marinated the chicken in coconut milk overnight then i breaded it in a mixture of plain panko breadcrumbs and sweetened flake coconut.  i deep fried it in peanut oil.&lt;/P&gt; &lt;P&gt;it looked good and it tasted okay...but there was def something lacking.  i had heard that soaking the chicken (or shrimp) in the coconut milk would give it a much more noticeable flavor.  NOT SO....not at all.  it made no difference in taste whatsoever.&lt;/P&gt; &lt;P&gt;first of all, i could not get the coconut to stick to the chicken properly.  it needed way more coconut. &lt;/P&gt; &lt;P&gt;i also think some sort of "coconut cream" dipping sauce would have been good with it. &lt;/P&gt; &lt;P&gt;so, who wants to help me figure out a way to make this better?&lt;/P&gt;</description>
