    <description>&lt;P&gt;I made this recipe today and we will be having it tomorrow night.&amp;nbsp; I tasted a little and it is very good.&amp;nbsp; A great way to use that zucchini.&amp;nbsp; I was cooking a lot today as I like to cook ahead as it makes it easier when I get home from work to just heat up and serve.&amp;nbsp;&lt;/P&gt;&lt;P&gt;Thank you for posting a wonderful recipe.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Miata 1&lt;/P&gt;</description>

      <title>Baked Chicken and Zucchini</title>

      <description>&lt;P&gt;I thought I would share a recipe we have been enjoying recently. Our garden has provided an abundance of yellow summer squash &amp;amp; zucchini this year &amp;amp; is still producing. I found this recipe on the All Recipe site while searching for an additional way to prepare these vegetables.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT face="Arial, sans-serif"&gt;Baked Chicken and Zucchini&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT face="Arial, sans-serif"&gt;1 egg&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="Arial, sans-serif"&gt;1 Tbsp water&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="Arial, sans-serif"&gt;½ tsp salt &lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="Arial, sans-serif"&gt;1/8 tsp pepper&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="Arial, sans-serif"&gt;1 C dry bread crumbs&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="Arial, sans-serif"&gt;2 Tbsp olive oil&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="Arial, sans-serif"&gt;4 boneless skinless chicken breast halves&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="Arial, sans-serif"&gt;1 Tbsp minced garlic&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="Arial, sans-serif"&gt;2 Tbsp olive oil&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="Arial, sans-serif"&gt;5 zucchini, sliced (I used 3 yellow summer squash &amp;amp; 2 zucchini)&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="Arial, sans-serif"&gt;4 tomatoes, sliced (I used 8 romas)&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="Arial, sans-serif"&gt;2/3 C shredded mozzarella cheese&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="Arial, sans-serif"&gt;2 tsp chopped fresh basil&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="Arial, sans-serif"&gt;1/3 C shredded mozzarella cheese&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT face="Arial, sans-serif"&gt;Preheat oven to 400 degrees; grease a 9x13 baking dish. Place bread crumbs on a plate, reserving 2 Tbsp crumbs. Combine egg, water, salt &amp;amp; pepper in a shallow bowl. Dip chicken in egg mixture &amp;amp; press into crumbs on plate. Heat 2 Tbsp oil in a large skillet over medium heat &amp;amp; cook chicken until both sides are browned. Remove chicken from pan &amp;amp; cover. Add remaining 2 Tbsp oil; cook &amp;amp; stir squash, zucchini &amp;amp; garlic til slightly tender. Transfer to baking dish. Sprinkle reserved crumbs over zucchini squash mixture, top with tomato slices, 2/3 C mozzarella &amp;amp; basil. Place chicken on top of vegetables &amp;amp; cover dish with foil. Bake about 25 minutes in preheated oven until chicken is no longer pink in the center &amp;amp; juiced run clear. (165 degrees F on instant-read thermometer). Uncover &amp;amp; sprinkle remaining 1/3 C mozzarella over top. Return to oven until cheese is melted, about 5 minutes.&lt;/FONT&gt;&lt;/P&gt;</description>

      <description>&lt;P&gt;Just had to write tonight to say how good this recipe was..&amp;nbsp; We really enjoyed it tonight and I will make it again.&amp;nbsp; I did marinate the tomatoes in olive oil and parsley and salt and pepper and that was so good before laying them in the casserole.&amp;nbsp; Thanks again&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Miata 1&lt;/P&gt;</description>
