Has anyone had this? It sounds very good. It's from the Pioneer Woman. I might play around with the ingredients a little, substituting green olives for the bacon.

padding: 15px 0px 0px; border: 0px; outline: 0px; font-size: 14px; vertical-align: baseline; line-height: 19px; background: transparent;"> Mix the sour cream, mayonnaise, salt, pepper, and vinegar together to make the dressing. Add more salt and pepper to taste.

Stir 2/3 of the dressing into the peas until the peas are coated. Gently stir in the bacon, onion, cheese, and parsley until all combined. Taste and adjust seasonings. Cover with plastic wrap and refrigerate 2 to 4 hours before serving. (Pop the extra dressing in the fridge, too.)

Remove from the fridge and stir in the rest of the dressing to your liking. Sprinkle with more parsley before serving.

I've had a recipe similar for 35 years. The only thing is no vinegar or parsley in mine. It's delicious. The key is frozen or fresh peas. Don't use canned peas or you will end up with mush. This is my favorite summer salad to take to potlucks.

This salad has been popular around here for a long time, and usually has boiled eggs, green onions, shredded cheese and a dressing with mayo, sugar and vinegar. I make it without the eggs, but add bacon and pimentos to the onions and cheese. I only eat it the way I make it, as I am allergic to egg whites and milk, so I totally avoid sour cream.

On 3/30/2015 betteb said:
I love pea salad. My version is a little different, but similar. Feel free to get creative with it. There are many, many versions.

I agree about getting creative with it. I love peas, and while I don't use this exact recipe, I make one that is very similar. Sometimes I've added a little salsa to the sour cream. I've also tried adding either some ranch or blue cheese salad dressing as a substitute for the sour cream. All have tasted good. I like a little crunch so I usually add some diced celery or green pepper, and I prefer using a coarsely shredded cheese instead of the cubes. When doing the cubes using swiss, pepper jack, or gouda cheese is a nice variation.

I also make a layered salad version of this, that was a family recipe and always seemed to be on the table at large gatherings. It's basically the same ingredients, but layered in a casserole dish with the addition of lettuce. Typically it's made with ice berg because it holds up better with the sauce instead of getting wilted, but really any type of lettuce or spinach leaves could be used. Start with a layer of lettuce, smear with some of the mayo/sour cream mixture, sprinkle some frozen green peas, top with chopped green onions or red onion, then add the diced green pepper or celery. Spread with the crumbled bacon and shredded cheese. Repeat all the layers once again ending with the shredded cheese, then sprinkle a handful of frozen peas on top for presentation. Refrigerate for at least 30 minutes prior to serving so all ingredients are chilled. It's easy, not expensive to make, and is a perfect dish for a potluck or picnic...and it's yummy!

I like shredded cheese better too, and not a lot, just a little. Also celery chopped really small and I like to use small (as small as I can find) green onions, minced fine. Always bacon..that's one thing that never changes.
