      <title>ORANGE CHICKEN</title>

      <description>&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;I got this recipe in an e-mail from Cuisine at Home.&amp;nbsp; I tried it last night and it is easy and worth sharing. &lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;3/4 cup orange marmalade&lt;BR /&gt;2 T finely diced piquante pepper (such as Peppadews)&lt;BR /&gt;2 T piquante pepper juice&lt;BR /&gt;1 T reduced salt tamari&lt;BR /&gt;1 T rice vinegar&lt;BR /&gt;2 t chili garlic sauce or sambal oelek&lt;BR /&gt;2 t cornstarch&lt;BR /&gt;1 t minced fresh garlic&lt;BR /&gt;1 t minced fresh ginger&lt;BR /&gt;1/2 t toasted sesame oil&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;2 T peanut oil&lt;BR /&gt;4 boneless, skinless chicken breasts seasoned with salt and pepper&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;Whisk together marmalade, pepper, pepper juice, tamari, vinegar, chili garlic sauce, cornstarch, garlic, ginger and sesame oil.&amp;nbsp; &lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;Heat peanut oil in saute pan over high heat until it shimmers; add chicken and saute until golden,&amp;nbsp;about 4 minutes per side.&amp;nbsp; &lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;Add marmalade mixture to pan: reduce heat to medium low and simmer, covered, stirring sauce and flipping chicken occasionally until 165 degrees (10-12 minutes).&amp;nbsp; Serve chicken with sauce.&amp;nbsp; &lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;I made this as written.&amp;nbsp; I think it would be good with chicken thighs instead of breasts.&amp;nbsp; I may try that next time and just adjust the cooking time.&amp;nbsp; &lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;I served this with Almond Rice (that I posted a couple days ago) and some steamed fresh aspargus.&amp;nbsp; Hope you enjoy it.&amp;nbsp; &lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;</description>
