I have never made wheat free baking mix. Just from doing a quick search I can see you would want a recipe someone has tried. I guess some leave an odd aftertaste. I came across this site that may help. If you don't like to click on links just search gluten free goddess. I have also heard Cup 4 Cup mixes are good but like you said that stuffs expensive. http://glutenfreegoddess.blogspot.com/2007/01/cooking-baking-gluten-free-tips-for.html

I have made the baking mix recipe in Dr. Davis's "Wheat Belly 30-Minute (Or Less) Cookbook." It's 4 cups almond flour/meal, 1 cup ground golden flaxseeds, 1/4 cup coconut flour, 2 t. baking soda and 1 t. psyllium seed (optional and I didn't use it). I mix it together and put it in a glass jar in my fridge.

I've used it to make the Apple Streusel Muffin recipe in this cookbook and they are delicious.

Bob's Redmill also makes a mix.

Check the "natural foods" section of any grocery store or Target or Walmart, they all typically carry Bob's product line now.

Keep the nut flours in the fridge all year long. They go bad very quickly. That's why they make them in smaller bags (although almond meal/flour is all the rage so they are making that in larger bags now).

I have the Red Mill GF baking mix and also the recipe for the wheat belly baking mix from the book. Haven't used either one of them yet but glad to hear that the W Belly mix is good.

thanks all

I use the flour blend recipe from America's Test Kitchen. You need to buy a number of individual ingredients, which is a drawback. On the other hand,I've gotten some of the America's Test Kitchen gluten free recipes using their own flour blend and they tasted pretty good. You can probably find it on line somewhere.

I've tried Bob's and found it grainy. If I had to use commercial,I like King Arthur or Cup 4 Cup ( pricey!). I try to buy on sale. Good luck.
