Without thinking, I greased a square pan and decided to use it rather than dirty another round pan. Next time, I will use a round pan for more rounded shaped biscuits. I got 9 biscuits out of this.&amp;lt;/p&amp;gt; &amp;lt;div id=" mediacontainer="" /&gt; &lt;DIV id="imgEnv-fullSizedImage" class="imgEnv"&gt; &lt;DIV id="mediaContainer" class="mediaContainer" style="padding: 0px;"&gt; &lt;DIV id="imgEnv-fullSizedImage" class="imgEnv"&gt;&lt;IMG id="fullSizedImage" class="media" src="http://i972.photobucket.com/albums/ae207/lavenderpix/Novemberphotos409copy.jpg" alt="/&amp;gt;&amp;lt;/div&amp;gt; &amp;lt;/div&amp;gt; &amp;lt;/div&amp;gt; &amp;lt;/div&amp;gt; &amp;lt;p&amp;gt;&amp;lt;strong&amp;gt;Cat Head Biscuits&amp;lt;/strong&amp;gt;&amp;lt;br/&amp;gt; from Cook's Country Magazine, April/May 2010&amp;lt;br/&amp;gt; &amp;lt;br/&amp;gt; 1 1/2 cups all-purpose flour&amp;lt;br/&amp;gt; 1 1/2 cups cake flour&amp;lt;br/&amp;gt; 1 tablespoon baking powder&amp;lt;br/&amp;gt; 1/2 teaspoon baking soda&amp;lt;br/&amp;gt; 1 teaspoon salt&amp;lt;br/&amp;gt; 8 tablespoons (1 stick) unsalted butter, cut into 1/2-inch pieces and softened&amp;lt;br/&amp;gt; 4 tablespoons vegetable shortening, cut into 1/2-inch pieces&amp;lt;br/&amp;gt; 1 1/4 cups buttermilk&amp;lt;br/&amp;gt; &amp;lt;br/&amp;gt; Adjust oven rack to upper-middle position and heat oven to 425. Grease a 9-inch cake pan.&amp;lt;br/&amp;gt; &amp;lt;br/&amp;gt; Combine flours, baking powder, baking soda and salt in a large bowl. Rub the butter and shortening into the flour mixture until it resembles coarse meal. Stir in the buttermilk until combined.&amp;lt;br/&amp;gt; &amp;lt;br/&amp;gt; Use a greased 1/2-cup measure or large spring-loaded ice cream scoop to drop 6 heaping portions of dough into the prepared pan. Place 5 around the pan's perimeter and 1 in the center.&amp;lt;br/&amp;gt; &amp;lt;br/&amp;gt; Bake until puffed and golden brown, 20-25 minutes. Cool in the pan for 20-25 minutes. Cool in pan for ten minutes then transfer to a wire rack.
