We have been enjoying the seasonal fruits this summer. Thought I would share one of our favorite desserts. I got the original recipe from a dear friend and will add the changes I have made to the recipe in bold.

Peach Crunch

6-8 C thinly sliced peaches

¾ C sugar (I use ½ C)

2 rounded Tbsp flour

Dash salt

Cinnamon to taste (I used ¾ tsp)

Combine & place in oiled 9x13 baking dish.

Topping:

1 C oatmeal

1 C brown sugar (I use ¾ C dark brown sugar)

1 C flour

½ tsp baking powder

½ tsp soda

½ C melted butter

Combine until well blended & sprinkle over the fruit. Bake at 350 degrees 35-40 minutes or until tender.

Can use any fruit, apples are good. For strawberry or strawberry blueberry omit cinnamon & add 2 tsp lemon zest to fruit, sugar flour mixture.

Fresh Market has had BOGO blueberries and strawberries recently, so we had a Strawberry Blueberry Crunch tonight. When I make it again, I will increase the flour on the fruit to 1/3 C because it was soupy. Maybe it would be less soupy if it cooled completely, but we couldn"t wait!

I substitute a Earth Balance buttery stick for the butter so our grandson, who is allergic to dairy, can have dessert with us. This makes a good dessert if you have someone who is vegan.
