I'm sorry if this has been asked before...I tried to find previous threads, but I didn't find the answers I was looking for...

Here is Lisa Robertson's recipe:

-1 cauliflower, cut up in small florets
-1 red onion cut in large pieces
-1 whole garlic, peel and mince cloves
Olive oil
Salt
Toss it all together, put on a baking sheet, in the oven at 400 degrees for 1 hour.

I've made it a couple of times, but I took it out early because it was starting to burn and turning black. (Yikes!) I saw on her Facebook page that someone said to bake it at 350 degrees. If you've made this, have you adjusted the temperature or time? Do you line your pan with foil or parchment? Have you added any other ingredients?

I appreciate any tips you have. My family really loved this, so I will be making it again. I just don't want to burn it!

I pretty much follow that recipe, but I do like my veggies pretty well done (yes, they looked burned). I do line my pan with foil. You don't have to let them get that done if you don't want to.

I actually made roasted cauliflower for the first time the other night. I didn't chase down Lisa's recipe, so I just pulled up a couple on Pinterest and winged it. I basically had the same ingredients except for the onion. I roasted mine at 400 degrees for 1/2 an hour. It came out good, just starting to brown. I could have let it go a little longer, but I don't think I'd go the whole hour. I did that with broccoli one time, and I burnt it to a crisp! I'd say start checking it after 1/2 hour so you can pull it out when it gets to the point you like it.

And thank you so much for posting Lisa's recipe here! I hadn't printed it when I read it in her blog, and I just didn't want to take the time the other day to try to find it again.

Roast it until it gets to the color and texture that you like. It's OK to roast it for less time or at a different temp. It's your poreference.

I cut up the head and toss with a bit of oil and roast @ 400 until it is done. Starts to turn brown/dark brwn at the edges and is tender to a knife poke

I leave out the onion and garlic

Roasted cauliflower is a wonderful substitute for macaroni in mac and cheese, let it cool a bit and make your usual from scratch recipie

This was a good recipe but I didn't use the amount of salt she did and I aslo did not bake it for an hour at 400 degrees. I tossed all the ingredients together and let them sit for about 30 minutes in the bowl. Then I spread them out on a large baking sheet lined with non stick aluminum foil. I baked them for about 30 to 35 minutes at 400 degrees and they turned out perfectly carmalized and delish. If you are going to bake it for an hour, I would reduce the heat to 350 as someone previously stated.

I have been roasting veggies for years; cauliflower, broccoli, onions, carrots, green, red or yellow peppers, whatever is in the vegetable bin of the fridge. I just use olive oil, salt and pepper, roast at 350 degrees for about 30-45 minutes, turning once about halfway through.....delicious. Some carmelization of the veggies is to be expected and tastes really good.

I make this all the time and one hour is way to long and the olive oil will start to burn and yellow on the pan.

400 Degrees 20 to 30 minutes. These are florets and won't take a long time to bake if you keep the oven door closed and the heat inside

I have made a similar recipe from Wegman's for years. Uses their basting oil (EVOO with herbs already in it) and shredded parm.

Their recipe states 350 for 35 mins. IMHO...her temp and times are WAY off!

I prefer my veggies not be mush...so sometimes, depending on the size of the florets...I take it out even soon.
